Every week I challenge myself and prepare some new dish. I tried this cashew spread recipe yesterday and was surprised how easy and tasty it was. Sharing is caring, so let’s share good stuff with each other.
Ingredients:
160 g cashews
One tablespoon lemon juice
½ teaspoon salt
pinch of freshly ground black or white pepper
Five tablespoons of water

Instructions:
I soaked the cashews in 500 ml water overnight (You should soak them at least for 4 hours). In the morning, I drained and rinsed them thoroughly. Then I placed all the ingredients – presoaked cashews, one tablespoon of lemon juice, ½ teaspoon of salt, a pinch of ground pepper and five tablespoons of water in a food processor and pulsed them for a couple of minutes until the smooth paste. Easy as that and tasting superb. Perfect as a dip with raw vegetable sticks or as a spread on bread or cracker.
